One-third of global food production is wasted, causing significant resource loss and greenhouse gas emissions. PURE-WAY develops sustainable, zero-waste solutions for fruit and vegetable by-products using green extraction, smart fermentation, and eco-friendly composting to enable a circular food economy.
The project aims to transform food waste into high-value products such as functional foods, bio-based chemicals, and fertilisers by applying advanced biotechnological processes.
